Abstract
Tato bakalářská práce se zabývá porovnáním dvou podniků z různých hledisek a porovnání jejich tržeb v období před, během a po pandemii onemocnění Covidem-19. V teoretické části je popsána historie stravovacích služeb, stravovací úsek jako takový, podmínky založení stravovacího zařízení a trendy v novodobé gastronomii. V praktické části je z různých hledisek srovnávána kavárna a restaurace, tato srovnání jsou doplněna o grafy tržeb obou podniků. V závěru jsou porovnávány tržby před, během a po pandemii a nakonec jsou přidány i názory obou majitelů. Výsledkem bakalářské práce je zhodnocení změny zákaznického chování a doporučení dalšího postupu pro oba podniky.
This bachelor's thesis deals with the comparison of two businesses from different perspectives and the comparison of their sales in the period before,during and after the Covid-19 disease pandemic. The theoretical part describes the history of food service, the food service sector as such, the conditions for establishing a food service establishment and trends in modern gastronomy. In the practical part, the café and the restaurant are compared from different points of view, these comparisons are complemented by the graphs of the sales of both businesses, the sales before, during and after the pandemic are compared and finally the opinions of both owners are added. The result of the bachelor thesis is an evaluation of the change in customer behavior and recommendations for further action for both businesses.
