Abstract
Bakalářská práce se zaměřuje na analýzu dopadů pandemie Covid-19 na ekonomickou situaci podniku v oblasti gastronomie. Předmětem práce je analýza vybraného podniku, analýza stavu v době pandemie a zhodnocení tohoto stavu. Z analýzy je vytvořen návrh strategie pro zvýšení ekonomického růstu podniku. Teoretická část vymezuje a vysvětluje význam základních pojmů z oblasti managementu služeb, gastronomie a vymezuje základní rozdělení krizí. V praktické části bakalářské práce je popsán stav v době pandemie Covid-19 v České republice. Analyzují se zde ekonomické dopady na ekonomiku České republiky a gastronomie, a také vládní zásahy v této době. V následující kapitole bakalářské práce je analyzována restaurace Kotelna, přičemž jsou při analýze aplikovány poznatky z teoretické části. Seznámení s podnikem a popis stavu v době pandemie dává představu o jeho fungování. Následně jsou analyzovány příjmy a výdaje, podle kterých je zhodnocen dopad pandemie na podnik. V poslední části je vytvořena analýza slabých a silných stránek restaurace, a také příležitosti a hrozby v okolí podniku. Podle této analýzy je vytvořen návrh strategie pro zvýšení tržeb a růstu.
The bachelor's thesis focuses on analyzing the impacts of the Covid-19 pandemic on the economic situation of a gastronomy business. The objective of this thesis is to analyze a selected business, assess its state during the pandemic, and evaluate this situation. Based on the analysis, a strategy proposal is developed to enhance the business's economic growth. The theoretical part defines and explains the significance of fundamental concepts in service management, gastronomy, and provides a basic classification of crises. In the practical part of the bachelor's thesis, the state of the Covid-19 pandemic in the Czech Republic is described. It examines the economic impacts on the Czech economy and gastronomy, as well as government interventions during this period. In the following chapter of the bachelor's thesis, the restaurant "Kotelna" is analyzed, applying the knowledge gained from the theoretical part. Introduction to the business and description of its state during the pandemic provide an insight into its functioning. Subsequently, the revenues and expenses are analyzed to evaluate the impact of the pandemic on the business. The last section presents an analysis of the restaurant's strengths, weaknesses, opportunities, and threats in its surrounding environment. Based on this analysis, a strategy proposal is developed to increase revenue and growth.
