Abstract
Bakalářská práce se zabývá problematikou transformace vybraného ubytovacího a restauračního zařízení na ekologicky zaměřený podnik. Cílem práce je analyzovat současný stav využití ekologických prvků a navrhnout vhodné oblasti transformace pro dané ubytovací a restaurační zařízení. Teoretická část je zaměřena na objasnění pojmů z oblasti teorie cestovního ruchu, ekologického podnikání a dalších, pro práci důležitých pojmů. Dále je představeno vybrané ubytovací a restaurační zařízení. Následuje praktická část práce analyzující současný stav uplatňování prvků ekologického managementu ve vybraném zařízení. Analýza současného stavu vychází z řízeného rozhovoru s majitelem vybraného zařízení. Na základě analýzy současného stavu je představen návrh transformace a vydána závěrečná doporučení.
The bachelor's thesis focuses on the issue of transformation of selected accommodation and gastronomic facility into an environmentally friendly company. The objective of the thesis is to analyze the current state of use of ecological elements and to suggest suitable areas of transformation for the given accommodation and gastronomic facility. The theoretical part is focused on definition of the terms, as for theory of tourism, ecological business and other terms important for this bachelor's thesis. Furthermore, selected accommodation and gastronomic facility is presented. The practical part of the thesis analyzing the current application of elements of ecological management in a selected facility follows. The analysis of the current condition is based on a controlled interview with the owner of the particular facility. Based on the analysis of the current situation, a proposal for transformation is presented and final recommendations are given.
